The University of South Bohemia is organising Food and Gastronomy in the Context of History, and Agricultural and Landscape Development of the Region of South Bohemia, from March 10 to 14, 2025. The BIP is intended for staff participants.

  • Participants interested in the history of our region can read the text provided by Prof. Jirousek "History and Culture in the Flow of Time"

Monday, March 10: Beer – History and Brewing in South Bohemia

10.00 – 12.00 Welcome reception at the Rectorate of USB

12.00 – 15.30 Beer – History, Brewing, Styles and Types of Beer

           Excursion to a microbrewery with beer tasting

           Excursion to a beer museum, including virtual reality of beer production

           Lecture on types and defects of beers; tasting of various beer styles and types; recognizing and identifying beer defects that occur during production or storage

19.00 Dinner at Masné krámy (Krajinská 13) (€ 25)

 

Tuesday, March 11: Manor Gastronomy, Hunting and Fish Farming

9.00 – 12.00 Hluboká and Vltavou Castle

           Tour of the castle’s kitchen and dining room

           Dining customs at the Schwarzenbergs – Game, hunting, forestry

12.00 – 14.30 Lunch at Solidní Šance (€ 25)

15.00 – 16.30 Ohrada Museum

           Tour of the museum, Lecture on hunting and ɛsh farming

17.30 Aquaponics at FROV

           Practical demonstration of ɛlleting and processing carp, Special ɛsh delicacies such as ɛsh ɛngers and canapés

 

Wednesday, March 12: Culinary Arts – Practical Workshop

10.00 – 14.00 Fine Food Academy

           Traditional Czech cuisine cooking class guided by an experienced instructor

 

Thursday, March 13: Gastronomy & South Bohemia

8.30 Departure to Třeboň

9.30 – 10.15 Castle Pharmacy

           Tour of the pharmacy with a discussion on the use of medicinal herbs

10.30 – 11.30 Štěpánek Netolický House

           Tour of the historical house of Mr Netolický the ɛsh farmer

12.00 – 14.00 Lunch at Kopretina (€ 25)

14.15 – 15.45 Regent Třeboň Brewery – guided tour

16.00 – 17.00 Institute of Microbiology – Algatech

            Tour and Lecture on “Algae as the Food of the Future?”

17.00 Departure back to České Budějovice

 

Friday, March 14: Ethnographic Customs & Traditional South Bohemian Pastries and Yeast Cakes

9.00 – 11.00 South Bohemian Museum

            Lecture on ethnographic customs associated with traditional dishes and sweets

11.00 – 12.00 Farewell

            Typical poppy seed pastries and cakes

            Awarding of certiɛcates for completing the BIP
